It is Hatch chile season in Houston and for a short time, Central Market is filled with crates of these chiles and the smell of chiles roasting right in the market. These quesadillas are a great way to use these beauties. If you are not lucky enough to find these fresh Hatch chiles, you could always substitute the canned variety (they come from mild to hot) or substitute roasted poblanos. The Hatch chiles are milder and slightly more acidic and tangy. Using chicken thighs insures that your chicken does not dry out. If you are in a pinch, you could always use a store bought roasted chicken and shred it. I served my quesadillas with my Spanish Rice (with some Hatch chiles), guacamole and a hearty salad.
