I love a flavorful side dish that pairs well with fish, chicken or beef and makes use of beautiful summer veggies. This recipe has wonderful earthy flavor derived from the bulgur wheat and an assortment of vegetables tossed in with fresh squeezed lemon juice and olive oil. The feta adds a hint of creaminess, but if you want a vegan version, simply eliminate the feta.

Serves 6 as a side dish.
