I love an easy weeknight dinner and this one is a roasted chicken, but the shallots become beautifully caramelized and sweet as they roast in the chicken marinade and juices. I used 5 chicken breasts which I cut in half, but you could easily use any chicken parts. I used chicken thighs with skin and bones. I think they work well in a baked chicken dishes and survive if they are a little overdone!!! *(leftovers are yummy, too)
