I love a great salad and this version of a Niçoise salad plays with many of the elements of the classic Niçoise Salad. Salad and fish are such a perfect combination, and this version is a play on the traditional salad Niçoise (one of my favorites). Roasted vegetables and the drizzle of an egg yolk from a poached egg are a delicious complement to a a seared tuna steak. On a side note, I have and enjoy poached eggs quite a bit and have found that an egg poacher is a wonderfully easy way to prepare the perfect poached egg that holds together and comes out easily from the non-stick poaching cups. If you are a fan of poached eggs, it is worth the small investment.
