It is always a treat when great foodie friends share a super food with you! This delicious Japanese seaweed is so delicious and healthy. My dear friend Linda was kind enough to share her recipe with me after gifting me a beautifully prepared jar of her hijiki salad. I added it to steamed Japanese rice and sauteed scallions, edamame, purple cabbage and shredded carrots. You can find the hijiki in specialty seaweed in Asian markets if not available in Asian section of your grocer. Her recipe is printed below with her permission.
