img_3112There are so many good recipes for Fried Rice and I find if you have extra rice, it is a great way to reinvent leftovers to create a new dish. I adapted this recipe from Saveur.  I love the combination of the bacon and shrimp in this dishm and the use of sushi rice, rather than long grain rice makes all the difference.

Serves about 4 -6 as a side dish
