Summer nights call for herby bites and this pasta is a mouthful of savory green olives, herbs and walnuts in each bite. I served this with some basil pesto marinated chicken, but you could easily keep it a vegetarian meal. The fresh herbs provide great flavor that are perfect for a hot summer evening. The shaved manchego was the perfect last earthy bite to this dish.
