When you have access to great, fresh fish, it doesn’t require too many competing flavors to render a delicious dish. I used a combination of corn and mushrooms to dress up the dish and added a hint of summer color and flavor. There are some diced Fresno chiles as well which add the slightest bit of heat. Any flaky, white fish would work well for this recipe.
