I invented these simple, healthy lettuce boats as a way to use all my leftovers in the fridge and they were just right for a light lunch at the beach and still packed with nutrition. You could use any combo of leftover vegetables. I had hummus, Quinoa, roasted Brussels sprouts and green beans and then added some other salad ingredients. Olives and a little feta would be great as well. You could use any vegetables available to make this healthy, fit-foodie lunch delicious.
