After making a few key lime tarts, I had some egg whites left over and this was a great way to make use of them. I love these mini cast iron skillets. They conduct heat so well, and when preheated, they give the egg a wonderful crisp crust on the bottom. They also make make for a wonderful presentation while cooking the egg beautifully and efficiently. If you don’t have a skillet, you can easily use any small baking dish or even a ramekin. You can also triple the amounts and do one large 12″ skillet. Love to serve this with bacon, grilled toast, a smoothie and fresh fruit.
