There’s no bad way to drink good tequila especially on Cinco de Mayo!  These cocktails are so refreshing and delightful. The basil infused simple syrup is so easy to make and even easier to sip with the watermelon.  The Simple Syrup stores well in the fridge, adding great flavor to this festive cocktail. There is plenty of sugar in the strained watermelon juice, so adjust the Simple Syrup to suit your taste. Cheers!

Serves 2

6 oz best tequila( blanco is preferable)

6 oz strained watermelon juice

1 tablespoon basil simple syrup

Splash of Cointreau 

Basil Simple Syrup:

1 bunch basil (about 1 cup)

1 cup sugar

1 cup sugar

Garnish with lime, and basil leaves

Directions: 

For Simple Syrup: Heat sugar, water and basil  in a saucepan. Heat the water and bring to a boil until sugar is dissolved. Allow to boil for an additional minute. Turn off heat and allow to cool. Store in a sealed container in refrigerator for up to one week.

For Watermelon Juice: Place 3 cups of cut watermelon in a processor. Place watermelon purée through a sieve and strain. Discard pulp, reserve juice. 

Make Cocktail: Place ingredients for margarita in a martini shaker with ice. Shake and strain through into glasses and serve immediately and enjoy!
