This simple salad is fresh and delicious and a wonderful complement to springtime fare. It takes about 15 minutes to prepare and is such a great combination of flavors.  It may make spinach eaters out of some of your pickiest clientele.  A perfect side salad for a spring menu or a brunch.


12 oz baby spinach

1 qt sliced strawberries

4-6 oz crumbled mild goat cheese

1 cup toasted sliced almonds


1/2 juice squeezed lemon

Squeeze of honey

2 tablespoons white wine vinegar

4 tablespoons of olive oil

Salt and pepper to taste
Place all vegetables in a salad bowl.  In a measuring cup, whisk all the dressing ingredients to combine.  Toss salad and serve immediately!  Enjoy!
