A delicious, healthy salad that has great flavor and invites every color of the rainbow on the plate. The overnight marinade really boosts the flavor and tastes great with all the vegetables. By splitting the breasts in half, the chicken cooks quickly and the marinade does not risk burning on the chicken. I served some coconut-ginger rice along side this dish.

This is exactly my kind of meal. Lots of colour, lots of greens, lots of healthy goodness. I don’t think i’ve ever had grilled pineapple but I love its flavor and I can imagine it really adding some sweetness to this. Fantastic dish!
