If you enjoy fish, this is an ideal way to cook and prepare it. It is a classic preparation in Texas and allows fresh fish to take center stage. My boys came home with these beautiful redfish filets, a small fish from the gulf waters off the coast of Louisiana. For this recipe, the skin and scales serve as the baking sheet. You could easily bake your fish, if you don’t have a grill, but I think a smoky grill adds wonderful added flavor.
