A simple sauce makes this chicken something rather special. I used bone in chicken breast for my version which adds some good flavor to the sauce. I found that the chicken required a little longer than the 7 minutes in the oven to complete the cooking process, but my chicken breasts were on the thicker side. I loved the crispy breadcrumbs that added nice texture and tasted great with the delicious sauce. I served the chicken with some red quinoa and bulgur with diced carrots and shallots and roasted cauliflower, broccoli and brussel sprouts.
