These are based on the recipe from PF Changs.  They make a wonderful appetizer and are truly quite easy and fast to make. At restaurants, you typically see them served with iceburg lettuce,  but I prefer the crispy corrugated leaves of Bibb lettuce that are wonderfully colored containers for the chicken and sauce. The Fresno chiles are an extra pop of color and heat. My family loved these!
