This is one of my favorite bistro salads that you can find all over France despite its origin in Lyons. With just a few ingredients, this salad becomes a delicious meal that comes together quickly and has such amazing flavor. You can use thick slab bacon if you prefer, but I love a thick slice of pancetta which reminds me of the lardon used in France. I have given the amounts for a sale for one, so grab a book or the paper and indulge!
