This recipe is a fun take on regular lasagna.  I love using the ground chicken which is a lighter fare than ground sirloin and pairs well with the spinach and mushrooms.  I usually make double the amount of red-vodka sauce as it freezes well and tastes great on pasta of any kind and makes for a great meal when you are in a pinch.  The vodka helps to balance the acidity of the tomatoes and really makes for a delicious red sauce. You can assemble the rolls ahead of time which makes them a great option for a busy family.
