Everyone has heard of sheet pan dinners– sheet pan eggs is the ingenious breakfast version. It is an easy and delicious way to feed a large crowd or a hungry family in no time. You can add pretty much anything to your eggs, I sautéed scallions, red peppers and Spinach and then added cherry tomatoes and cheese. I lined my baking pan with parchment and a quick spray of cooking oil which made it super easy to cut and serve. Serve up the eggs on toast, a bagel or as part of a sandwich — such a wonderful and delicious idea!
