This is a lovely, healthy salad that is beautifully flavored with fresh herbs and a lemon vinaigrette. The roasted squash lends an earthy flavor to the dish along with the toasted pecans and tart-sweet of the dried cherries. It pairs very well with fish or poultry or simply add it to a green salad and you have a wonderful meatless entrée.
