I was at a close friend’s wedding in San Antonio recently and part of the menu included these delicious Chicken-Poblano Quesadillas. I tried to recreate the flavor in enchilada form and then added the rice and a great green salad with a Buttermilk-Avocado dressing. It was a meal that pleased the family and the creamy sauce was delicious.
