If you love the taste of ginger, these delicious cookies are perfect. They remind me of a chewy gingersnap with a hint of cinnamon. The secret to these chewy cookies is to use three kinds of ginger: crystalized ginger, fresh grated ginger, and ground ginger. I have played around with this recipe a bit and I think an all brown sugar batter works the best.
