Greek food is always a good idea!  You can grill your souvlaki on a grill pan or on the grill.  I opted for the grill for this version and it doesn’t take long as the pork is thinly sliced. I served this meal with some homemade french fries and good pita bread.  You could easily substitute chicken tenders for the pork if you prefer poultry.  The key to the Tsatsiki, which is a traditional greek condiment, is to use whole milk yogurt and make sure you strain it well for several hours which leaves you with a lovely, thick spread.  The hummus is more middle-eastern than Greek, but mixes well with the rest of the meal.
