I love the caramelized fennel in this recipe –it is perfect with the slow-roasted tomatoes which is one of my favorite ways to enjoy tomatoes.  I doubled the amount of fennel in the recipe and used a hand-held julienne blade to obtain the thin Fennel matchsticks.  I served this along side some a  chicken piccata with capers and salad to for a complete meal.
