If you love butternut squash in a creamy sauce, this is your pasta dish.  The main recipe is below, although I changed a few things.  I roasted an onion along with the squash and seasoned the squash with some dried sage as it roasted. I also added some chopped sage along with the oregano and thyme to boost the flavor.   The recipe has pepperoni as an option which I did not include, but I did serve some chicken on the side along with a salad. All in all, the roasted squash provides a luxurious and rich  background for the sundried tomatoes and cheeses for great fall flavor.
