Such a wonderful side-dish that is full of fresh herbs and pistachios.  Don’t be intimidated by a little chopping, it is well worth it.  I used Israeli Couscous in my version and grilled my haloumi on the stove for about 2 minutes on each side in a grill pan with a smidgen of oil and it was just right.  It’s from Poppy’s Catering and I found it on the Food52 website.
